2 cups basmati long-grained rice
2 1/2 cups chicken broth
1/2 stick butter
1 tea saffron crushed
1/2 cup Zereshk barberries (red cranberry-like berries)(import store like Nabeels)
1/2 cup onion, finely chopped

Directions:
Soak rice for 2 hours, rinse again to remove starch. Add rice, broth, & butter to electric rice cooker. Stir it right before it comes to a boil, then leave the lid on and don't open. If it clicks off, press warm to make a nice brown crust. Unplug it to stop cooking process.

Crush small amount saffron threads between your fingers into a fine powder. Place saffron in a very small bowl, add 1 Tbl hot water and stir to dissolve. Then add 1 tea sugar and stir. You can either add the saffron to the rice cooker at the beginning of the cooking process or add it to the barberries...see next procedure.

Place barberries in small bowl, add 2 Tbl hot water, 2 Tbl sugar. Stir till dissolved. Let this soak for 1 hour, as it will cut the sharpness and make the berries look bright.

In skillet, sauté onion in butter until onions are caramelized. Add the saffron mixture and continue to sauté until most of the water has been absorbed. Optional: 1/2 cup currants (tiny raisins) and 1/4 cup sliced almonds.

To serve: spread the cooked rice across a large platter, sprinkle with the Zereshk barberry mixture, repeat layers. Mondonna serves roasted chicken (Publix), pulled off the bone, arranged around the platter of rice. Beautiful & delicious!
