½ cup lite soy sauce
½ Russian dressing (or Catalina dressing)
2 Tbl sesame seeds
Juice of 3 lemons
½ tea ground ginger
½ tea garlic powder
1 ½ lb pork tenderloins, cut into 1-inch cubes, remove silver skin membrane
2 yellow squash, cut into ½ inch slices
Large onion, chunked
1 green bell pepper
1 (15oz) pineapple spears (chunks), drained
Saffron rice
Green onions, sliced

Directions:
Directions:
Combine first 6 ingredients. Remove ½ cup of mixture and reserve in fridge. Place the remaining juices and tenderloin chunks in a large zip-lock baggie. Place in fridge for 3 hours to marinate.

Cut squash into ½ slices, onions into skewer chunks, & bell pepper into skewer chunks. Add drained pineapple. Either arrange onto long skewers, alternating with meat or place in a grill basket. Discard marinate.

Grill over med-high heat 4 minutes on each side, baste with the remaining marinate (you set aside earlier). Serve over saffron rice. Garnish with green onion slices.
