6 pounds Beef Short Ribs
8 slices bacon, diced
2 large onions, diced
3 carrots, chopped
3 stalks celery, diced
8 cloves garlic, smashed
1/4 cup tomato paste
1 cup dry red wine
6 cups beef stock
3 sprigs fresh thyme
2 bay leaves
Salt and Pepper, to taste

Preheat oven to 375º Season with salt and pepper. In a Dutch oven, render bacon over medium high heat. Do not burn. Remove crisp bacon and set aside. In the bacon fat, brown short ribs on all sides. Once all the ribs are brown, remove and set aside. Add carrots, onions, celery and garlic to pot and sauté until lightly caramelized. Add tomato paste and cook 1-2 minutes. Add red wine and reduce by half. Add beef stock and bring to a rolling boil. Add browned beef short ribs, cover and place in a pre-heated oven. Cook 2 hours, checking for tenderness. When ribs are fork tender remove from stock and set aside. Reduce stock by half. Pour strained liquid over short ribs and serve. May be served over mashed potatoes, risotto, or pasta.
