Ingredients: 4 eggs 4 tablespoons butter, melted (Earth Balance works fine) ½ cup all-purpose flour (regular or gluten-free) 2 cups milk or So Delicious unsweetened coconut milk beverage 1 teaspoon vanilla extract ½ cup + ⅛ cup (10 tablespoons) sugar 1 cup sweetened flaked coconut ⅓ cup unsweetened finely shredded coconut + more to sprinkle on top of the custard before baking

Directions:Preheat the oven to 350º F.
Butter a 10-inch pie plate or a round 8 x 2-inch deep casserole dish, preferably with straight rather than sloped sides.
In a blender, place everything but the coconut. Mix until it is well blended.
Add the coconut and blend for a few seconds or until it is all mixed.
Pour mixture into the pie plate or casserole dish. Sprinkle the top all over with more finely shredded unsweetened coconut. Bake the custard for 50-60 minutes or until the custard is set and the top has developed a deep golden brown crust. The custard will take longer to bake in a casserole dish than in a shallow pie plate. |

I've already cut back on the butter and sugar in here, so I'm not sure you should risk trying to make this any more "healthy". The original recipe actually called for 6 tablespoons of butter and ¾ cup of sugar. I made it once with ½ cup of sugar and the unsweetened coconut milk and thought it wasn't quite sweet enough.
