3 tbsp. soya sauce
2 tbsp. apple juice
1 tbsp. cider vinegar
1 tbsp. sugar
3 garlic gloves, minced
ground pepper to taste
1 1/4 pounds of flank steak, cut diagonally across the grain into 1/2 inch by 3 inch strips
1 tbsp. and 1tsp of canola oil
1 tbsp. cornstarch
1 head of broccoli, stems trimmed and cut into 1/4 inch rounds- bite sized
coarse salt to taste

In large shallow bowl mix soya sauce, apple juice, vinegar, sugar, garlic, and 1/4 tsp. pepper. Add meat, toss and coat. Let marinate 15 minutes. Transfer meat to plate and reserve marinade.
Heat tbsp. oil in a 12 inch non stick skillet over high heat. In two batches, cook meat until lightly browned, turning once, about 2 minutes per batch. Remove meat. Add 1/2 cup water to pan; stir up browned bits with a wooden spoon. Pour into marinade; whisk in cornstarch. In same skillet fry broccoli in remaining tsp. of oil over high heat until bright green and crisp. Tossing often about 2 minutes. Add one cup of water; cook until broccoli is tender, 6-8 minutes.
Stir marinade, add to pan and bring to a boil. Cook stirring until thickened, about 30 seconds. Return meat to the pan; toss and coat. Season with salt and pepper. Serve immediately.

To make it easier to slice meat, place it into the freezer for 20-30 minutes wrapped well in plastic.
