4 chicken breasts or 2 1/2 lb chicken
1/4 cup sliced water chestnuts
1/2 lb halved green grapes
1/2 cup chopped celery
1/2 cup toasted slivered almonds
1/2 cup or 3/4 Best Foods mayonnaise
1/4 cup sour cream
1 tsp curry powder
2 tsp lemon juice
2 tsp soy sauce
1 8 ounces canned pineapple chunks

Directions:

Bake chicken for one hour in tin foil at 400 degrees. If using whole chicken put in large pan with 3 cups water, salt, few peppercorns, little onion and cook 45 minutes) Drain, bone and cut up. Combine chicken, water chestnuts, grapes, celery, 1/4 c almonds. Mix mayonnaise, sour cream, curry, soy sauce, lemon juice. Pour over chicken mixture. Toss and chill several hours. Spoon on lettuce leaves, sprinkle remaining almonds and garnish with pineapple chunks.

Pretty to serve in fresh pineapple boats.
