1 lb. ---------------------------------- Lean ground beef
1 medium -------------------------- Onion, chopped
2 ribs -------------------------------- Celery, finely chopped
2 qts.--------------------------------- Beef broth
1 (28 oz.) can -------------------- Tomatoes, chopped
2 medium -------------------------- Carrots, finely chopped
2 medium -------------------------- Potatoes, cut into 1/2 -inch cubes
1/3 cup ------------------------------Pot barley
1/2 tsp. ----------------------------- Paprika
1 tsp. -------------------------------- Salt
1/4 tsp. ----------------------------- Ground black pepper
2 tbsp. ------------------------------ Worcestershire sauce

Directions:

Brown ground beef in a large pot or Dutch oven

Add onion and celery and saute over medium-low heat until soft.

Drain off excess fat.

Add all of the remaining ingredients except for the potatoes, cover and simmer for about 1 1/2 hours or until the barley is tender. Add potatoes in the last 20 minutes of cooking time.

Adjust seasoning to taste in the last few minutes of cooking time.

Yields about 5 quarts
