2 lbs carrots
1 cup sugar
2 eggs
1 tsp vanilla
1/2 tsp nutmeg
1/2 tsp cinnamon
1 tsp salt
1 cup milk

Directions:
Directions:
Peel and boil carrots until tender. Drain and puree in food processor or blender. Mix in the rest of the ingredients and pour into a casserole dish. bake at 400 degrees for 30 minutes.
