1.5 pounds boneless chicken breasts
2 Tablespoons vegetable or olive oil
1/2 cup chopped onions
2 cloves garlic
2 cups salsa- any type you like
1/2 cup chicken stock
1/4 cup currents or raisins
2 Tablespoons honey
1 teaspoon cinnamon
1 1/2 teaspoons cumin
1/2 cup slivered almonds

Directions:
Directions:
Preheat oven to 325 degrees. Brown the chicken in oil and then place in the baking dish. In the same pan you browned the chicken in, sauté the onion and garlic, being careful not to burn the garlic. Add the salsa, chicken stock, currants, honey, cumin and cinnamon to the pan. Pour over the chicken. Sprinkle with almonds and bake.

Serve with rice or couscous
