2 T. butter
1 chicken breast per person
1/2 c. coconut rum
Lump crabmeat
Thinly sliced Swiss cheese

Directions:
Directions:
Melt butter in iron skillet. Add coconut rum. Simmer. Add chicken breast and cook until done. Remove and place on oven proof pan or platter. Arrange crabmeat chunks on top of each chicken breast. Spoon remaining rum/butter mixture over chicken. Sauce should have thickened. Place one or two slices of Swiss cheese on top of crabmeat mixture. Broil in oven until golden and bubbly. Serve hot with asparagus as a side dish.
