1/2 c. golden raisins
1/2 c. apple juice
3 whole poached chicken breasts, cubed
3-4 stalks celery, trimmed, washed and cut into 1/2 inch slices
1 medium green apple, washed, unpeeled and cubed.

Dressing:
1 c. low or nonfat plain yoghurt
1 tsp curry powder
1 tsp ground cumin
2 tsp white wine vinegar
1/4 c. fruit from store bought jar of mango chutney, minced Tobasco sauce.

Topping:
1/2 c. cilantro or parsley leaves, chopped
1 c. whole toasted almonds, roughly chopped

Directions:

Place the raisins in a small bowl.
Warm the apple juice and add to the bowl; let the rains plump for 5-10 minutes.
Drain, reserving the liquid.
Combine the chicken, raisins, celery and apple in a serving dish.
Whisk together the dressing ingredients, adding dashes of Tabasco sauce to taste.
Pour the dressing onto the salad ingredients and toss gently to combine.
Sprinkle the cilantro and chopped almonds over the salad and serve immediately.
