Baked Pork Chops (or Chicken Breasts) with French Onion Soup and Raisins Recipe

Ingredients: 6 or more cups homemade onion soup (see recipe) or 3 cans Campbell's French Onion soup 1 cup raisins 8 boneless pork chops salt and pepper

Directions:Salt and pepper 8 pork chops (and/or chicken) on both sides. Lay them in a single layer in a baking pan, along with the raisins. Pour enough onion soup over the top of the pork chops to cover the meat, and cover with aluminum foil. Bake in 400º oven for about 20 minutes, and then reduce the heat to 350º and bake in the oven for about 2 more hours, turning the meat over in the pan about every 45 minutes. To thicken the sauce, uncover for the last half hour of baking. Bake a little longer, if necessary, until the meat is tender. |

Notes: My grandmother (Lois Baker) used to make this for us when we came to visit in Leavenworth. The raisins add a wonderful sweet taste to the meal, and even if you are not a raisin fan, you can simply avoid eating them, while still enjoying the flavor they impart. I made these recently for Elsa and Mikey, and added the chicken breasts for Elsa, who is not a fan of pork. They turned out well too! (I had to make my own gluten-free onion soup, but for those of you who don't need to worry about that, the canned onion soup is mighty tasty too - and a lot easier to prepare!) As always, this meal is great with baked sweet potatoes and a vegetable.
