4 limes, squeezed
1 cup tequila
1/4 olive oil
2 tea kosher salt
5 cloves garlic, minced
1 jalapeno, seeded & chopped
1/2 bunch fresh cilantro, chopped
Optional toppings and sides:
2 cups Monterey Jack cheese, shredded
salsa
additional lime wedges
avocado slices
sour cream

Directions:

Overnight: In a food processor, add the squeezed juice of 4 limes, tequila, olive oil, salt, garlic, jalapenos, & cilantro. Blend until combined. Place the chicken in large zip-lock baggie and pour lime-tequila mixture inside. Seal and marinate for 8 hours or overnight.

Remove chicken from marinate and grill over med-high heat for 5 minutes per side, or until done. Add cheese at the end and melt over top of chicken. Serve it sliced on a platter and served with optional sides.
