12 oz pitted, bite-size dried plums
3.5 oz jar capers
0.5 oz bottle dried oregano
6 bay leaves
1 Tbl minced garlic
1 cup pimento-stuffed olives
1/2 cup red wine vinegar
1/2 cup olive oil
1 Tbl course sea salt
2 tea pepper
5 chicken breasts, bone-in & skin on
1 cup brown sugar
1 cup dry white wine
1/4 fresh parsley, chopped

Overnight: combine first 10 ingredients in zip-lock freezer bag. Add chicken, turning to coat well. Chill for at least 8 hours or overnight - turning occasionally.

Arrange chicken skin side up in 9x13 baking dish. Pour marinade over chicken, sprinkle evenly with brown sugar. Pour wine around pieces. Bake 350 deg for 1 hour, basting as needed.

Remove to large platter over a bed of rice, reserving juices to pour over top. Sprinkle parsley over top. Serve juices on the side.
