4-5 lbs Beef Roast
4 potatoes, peeled & chopped
5-6 carrots, peeled & chopped
2 large onions, peeled & chopped

GRAVY: 1 c cold water, 3-4 Tbsp flour, meat juices

YORKSHIRE PUDDING: 2 eggs, 1/2 c milk, 1/2 c flour, 1/4 tsp salt

1. Salt meat.
2. Cook roast, uncovered, in 350º oven to brown for 1/2 hour
3. Add 2 c water and cover with lid. (Cook roast for 1/2 hr per pound of meat for Well done)
4. 45 mins before Meat is done, add vegetables.
5. After 30 mins of cooking, check vegetables. If they are cooked, remove meat and veg from oven.
6. Drain off liquid and keep for gravy.
7. Put meat and veg back in roaster, cover, and reduce heat to 200º
8. GRAVY: Place meat juices in medium sauce pan (add water to liquid, if more gravy is needed). Put cold water in a jar and add 3-4 Tbsp of flour, mix until smooth. (flour quantity depends on how thick you want the gravy) Whisk water/flour mixture in to meat juices, stirring constantly until gravy thickens. Medium heat is best.
9. YORKSHIRE PUDDING: Beat mixture well. Pour a little oil in muffin tin. Add pudding mixture and bake in preheat, 375º oven for approx. 15 mins
