2 Cups of Cherry Tomatoes (or 2 large ones)
2 tbsp. oil
3 cloves of crushed garlic
1/2 cup of diced onion
3 cups of chicken or vegetable broth
1 can of diced tomatoes
3 tsp. of salt (added at the end - to taste)
1 tsp. black pepper
1/4 cup of fresh, chopped basil (or 3 tbsp. of dry)

PREHEAT oven to 400ºF

ROAST cherry tomatoes with 1 1/2 tbsp. of oil, 1 tsp. of salt and pepper. This takes approx. 15-20 minutes - until tomatoes have a slightly brown color to them

WARM a large pot with the remaining oil. Add garlic and onions. Stirring constantly over medium heat. Add in roasted tomatoes, broth, canned tomatoes and juice and basil. Bring soup to a boil and then reduce to simmer (med/low heat). Add more salt and pepper to taste

FOR desired consistency...you can blend with hand mixer or blender..Serve hot!

If you're concerned about salt to taste (cause we love our salt...) add Chicken soup base, Maggie, or no-salt substitute.
