1 1/2 c. flour
3/4 cup white sugar
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt (optional)
1/2 cup oil/butter (or healthier version - 1/2 cup apple sauce)
1 egg
3-4 medium size ripe bananas
1 1/2 cups of chocolate chips (optional)

Directions:

PREHEAT oven to 350ºF

GREASE or SPRAY Loaf pan or muffin tins

BLEND egg, butter or oil (or apple sauce) with sugar. Once blended, stir in mashed bananas. Set aside and mix in separate bowl your dry ingredients. Fold dry ingredients - including chips.

POUR into greased bread pan or muffin pans.

BAKE muffins for 20 min or bread pan for 40-45 min. Cool and remove from pans.

Tip: change up the chocolate chips for cranberries, blueberries or pecans (half the amount).
