3 c. flour
2 c. sugar
1/3 c. cocoa
2 tsp. soda
1 tsp. salt
1 c. cooking oil
2 tsp. vanilla
2 T. vinegar
2 c. coffee (leftover or made with instant)

Oven 350º
In mixing bowl blend oil, vanilla, vinegar and cold coffee. Gently whisk dry ingredients into liquids until mixed together. Pour into (9 X 13-inch) pan. Bake 25 to 30 minutes until tests done. Cool. Serve as is, dust with powdered sugar, or top with fave frosting. This cake can also be mixed and baked in one pan, "wacky-style".

Variation: Mix 1 1/2 c. flour, 1 c. sugar, 3 T. cocoa, 1 tsp. baking soda and 1/2 tsp. salt in an (8-inch) square pan. Make 3 holes in batter. Pour 1 T. vinegar in one, 6 T. oil in the second, and 1 tsp. vanilla in the third. Pour 1 c. cold water over the top; mix all together with a fork until smooth. Bake for 25 minutes.

The term "coffee cake" caused me years of confusion, all starting with this recipe which Mom baked for a Rotatory Club meeting in our home. She served our guests a dark, fudgy "coffee cake" that was delicious; but, Wacky Cake might or might not be Coffee Cake which might or might not be chocolate, or contain coffee. "Coffee Cake" might even be any number of delicious quick breads or yeast breads of any imaginable flavor. If only other sources of confusion could simply be settled in our kitchens. -BAS
