1 1/2 c. sugar

1 tsp. each: salt, vanilla, lemon extract, soda
4 1/2 c. flour

Here's what Grandma wrote: "Make like sugar cookie dough. Shape dough into logs and wrap in wax paper. Chill well. Roll out about 3/8- in. thick, no thinner than 1/4-in. Keep dough chilled as you work and use as little extra flour as possible. Bake 5 to 7 min." (She didn't suggest temp.) "Cool before decorating." (She always gave Santa a red hat with white frosted pompom and white band. He had white eyebrows, raisin eyes, white frosting mustache and beard covered with coconut. His nose, cheeks, and mouth were sometimes frosted with pink or red, or red sugar crystals over white frosting gave Santa his rosiness. Sometimes red hots decorated his hat.)

The Santa Cookie debate is now open...how, exactly, did Grandma decorate those Santa faces? She also had 2 other heavily bespattered and faded recipes for Mr. Claus. This version appeared to be the oldest, but you can decide for yourself. Lots of love and generosity of heart went in to every Santa she gave away over the years.

Variation 1: 2/3 c. shortening, 1 1/2 c. sugar, 2 eggs, 1 tsp. vanilla, 3 1/4 c. flour, 2 1/2 tsp. baking powder, 1/2 tsp. salt, 1 T. milk

Variation 2: 3 1/2 to 4 1/2 c. flour, 1 tsp. soda, 1 c. shortening, 1 1/2 c. sugar, 3 eggs, 1 tsp., almond extract, 2 tsp. vanilla.
