2 1/4 c. flour
1 tsp. baking soda
2 tsp. ground ginger
3/4 tsp. ground cinnamon
1/2 tsp. ground cloves
1/4 tsp. salt
3/4 c. butter or margarine
1 c. sugar
1 egg
1 tbsp. water
1/4 c. molasses (treacle)
1 c. candied ginger, chopped (Optional but well worth it! See below.)

1. Sift together flour, spices, baking soda, and salt.
2. In a separate large bowl, mix butter/margarine and sugar. Then mix in egg, water, and molasses. Then, mix in dry ingredients and finally, candied ginger.
3. Shape dough into balls and coat in sugar.
4. Press onto a greased baking sheet and bake at 350º F for 8 minutes. For super-soft cookies, remove from oven as soon as edges begin to brown, or even before!

Candied ginger:
3 to 4 fresh ginger roots
2 cups water
2 cups sugar
extra sugar for dipping

1. Peel the ginger and cut it into julienne strips.
2. Bring water and sugar to a boil in a saucepan, then add ginger.
3. Let the ginger simmer for 30 to 45 minutes, then drain.
4. While hot, place the ginger on a baking tray and pour enough sugar on top to cover the ginger. Mix well.
5. Let sit out until the ginger has hardened a bit.
(If you are going to store the ginger, let it sit out for up to two days and then remove from the sugar and place in an airtight container.)
