Salad
9 ounces mixed greens
1 pear, sliced
1/2 cup dried cranberries
1/4 cup pomegranate seeds
1/2 cup coarsely chopped pecans
1/2 cup dried cranberries
3 oz. feta cheese

Pomegranate balsamic vinegar dressing
1/2 cup of light tasting olive oil
1/4 cup of balsamic vinegar
1/4 cup pomegranate juice
1/2 tsp kosher salt
1/2 tsp minced garlic
1/8 tsp pepper
1/8 tsp dry mustard (powder)
1 tbsp. maple syrup or honey - to taste

COMBINE the first seven ingredients in a bowl

PREPARE dressing - Combine olive oil with balsamic vinegar & whisk until the two ingredients are thoroughly combined, add pomegranate juice to the mixing bowl, & whisk until it is thoroughly combined. Add kosher salt, pepper, garlic & dry mustard, whisk again until it is combined. ADD maple syrup or honey to sweeten

DRIZZLE with pomegranate balsamic vinegar and olive oil to taste.

TOSS & serve
