2 c. flour
1/4 tsp. baking soda
1/2 tsp. salt
3/4 c. butter, melted (1 1/2 sticks)
1 c. packed brown sugar
1/2 c. white sugar
1 tsp. cinnamon
1 T. vanilla extract
1 egg
1 egg yolk
1 1/2 c. old-fashioned oats
1 heaping cup raisins
1/2 c. chopped walnuts or pecans (optional)

Preheat oven to 325ºF. Line cookie sheets with parchment. Melt butter and let cool slightly. In a medium bowl, cream together sugars and butter until well blended. In a separate bowl, mix flour, soda, and salt, set aside. Beat into sugar/butter mixture; cinnamon, vanilla, egg and egg yolk for 2-3 minutes until light and creamy. Mix in the flour mixture until just blended. Add the oats, nuts and raisins. Stir until just blended. Place 1/4 c. balls of dough onto cookie sheet and bake for 14-16 minutes. Do NOT overbake! The edges should be brown and the centers still slightly soft. Let cookies rest on the cookie sheet for a couple of minutes before transferring to a cooling rack. Store in airtight container.
