6 Large ripe tomatoes (or 1 can of whole tomatoes, but fresh is best)
2 Sweet red peppers
2 Medium white onions
2 Large shallots
2 Large cucumbers
1/2 Cup fresh dill
5 Cups tomato juice
1/3 Cup red wine vinegar
2 Tablespoons olive oil
dash of Tabasco

Directions:

Seed peppers, cukes, and tomatoes. Coarsely chop all veggies.

Puree in small batches in a blender, but save some of the veggie chunks for texture.

Add enough tomato juice to desired consistency.

Whisk together red wine vinegar and olive oil. Add to mixture.

After all combined, stir in dill, Tabasco, and salt and pepper to taste.

Chill at least 4 hours.
