1 lb. ground beef
1/2 lb. ground pork shoulder
1/2 lb. veal shoulder - ground
1 small onion - chopped
1 green pepper - chopped
1 carrot - shredded
2 garlic cloves - minced
1 teaspoon salt
1 teaspoon mustard
1/2 teaspoon pepper
1/2 teaspoon dried thyme
Nutmeg - pinch
2 eggs - beaten
1/2 cup bread crumbs
6 strips bacon

Directions:
Directions:
* Preheat oven to 350º
* Combine meats, onion, green pepper, carrot, garlic and seasonings
* Blend well, mix in eggs and bread crumbs - combining thoroughly
* Spread 4 slices of bacon in a shallow 8" baking pan
* Form meat mixture into a firm loaf and place on top of bacon
* Place the remaining bacon on top of loaf
* Bake for 1 hour - basting several times with pan juices
