Mojito Mousse Recipe

2 tsp unflavoured gelatin powder
1/4 cup freshly squeezed lime juice
1/2 cup granulated sugar, divided
3 tbsp rum (dark or light) (or 2 tsp. vanilla)
1 1/2 cups of 35% whipping cream
2 tsp grated lime zest
1 tbsp chopped fresh mint
(save a couple of fresh mint leaves and lime slices for decoration on top)

1. In a small saucepan, sprinkle gelatin over lime juice; let stand for 5 minutes. Add half of the sugar and the rum; heat over medium-low heat, stirring until gelatin and sugar are dissolved (about 2 minutes). Let cool.
2. In a chilled bowl, whip cream with remaining sugar just until stiff peaks form; fold in lime juice mixture, lime zest and chopped mint. Spoon into large bowl or individual bowls. Cover loosely and refrigerate for about 30 minute or until set (or for up to one day)
Serve with fresh berries & Garnish with fresh mint and lime slices.
