18 tbsp (2 sticks + 2 tbsp unsalted butter) at room temperature
1 1/2 c + 1 tbsp packed brown sugar
4 1/2 c flour
1 1/2 tsp. baking powder
1 large egg, beaten
2 tbsp milk
2 scant tbsp spice blend (equal parts cinnamon, ground cloves, and ground star anise) (or 5 spice blend)
1 1/2 tsp freshly grated nutmeg
pinch of salt
3 1/2 tbsp finely grated navel orange zest (3 oranges)

Combine the butter and sugar in one bowl of a mixer at low speed for 5 minutes until smooth and lightened in color, stopping to scrap down the sides as needed.

Sift together flour and baking powder. Then add to the bowl in 3 additions, beating on low speed to incorporate after each addition. The mixture will be pebbly. Add 1/2 of one egg (reserve the 1/2 egg for other use) milk, spices, salt, and orange zest.

Beat on low speed until dough forms and pulls away from the bowl. The dough should be wonderfully fragrant but not sticky. Divide the dough in half. Roll each between two large pieces of wax paper into a rectangle with an even thickness of 1/8". Slide each on to a large baking sheet and refrigerate for at least 1 hour or preferably overnight.

Preheat the oven to 375 degrees with the oven rack centered. Line baking sheets with parchment work with one sheet at a time. Cut the dough into 1 1/2" squares or use a 1 1/2 round cookie cutter. Transfer to sheet. scraps can be rolled and rechilled.

Bake one sheet at a time for 10-12 minutes, start checking at 10 minutes, until wafers are evenly browned. Let cool on baking sheet 2 minutes before transferring to a wire rack to cool.

Repeat with 2nd dough. For optional coating of chocolate. Place chocolate chips or pieces in glass measuring cup and microwave 10 seconds and stir. Do in 10 second intervals until soft enough to stir. Stir until smooth and almost pourable. Dip a corner of each cookie into chocolate and cool on wax paper until set. Store in air tight container.
