Ingredients:  
Ingredients:  
4 cups of Fish Stock
4 tblsp of butter
4 tblsp flour
1/8 tsp nutmeg
4 large diced red potatoes
˝ cup diced onion
˝ cup chopped celery
4 tblsp butter

1 pound Lobster meat
3 oz Salmon cubed
3 oz Haddock
4 oz Shrimp
2 oz Scallops

1 cup heavy cream (35%)

Directions:
Directions:
1. Heat fish stock to simmer
2. Combine butter and flour to make a paste
3. Whisk paste into fish stock for 2 minutes
4. Season with salt & pepper and nutmeg – set aside
5. Cook potatoes until tender – drain set aside
6. Melt 4 tblsp butter sauté onions and celery until soft
7. Stir in all seafood and simmer for 3 minutes
8. Combine seafood and potatoes with fish stock
9. Add cream (do not boil – or else cream will separate)
10. Serve with fresh rolls....
