1 lb breakfast sausage - I use mild
3 cups shredded potatoes
1/4 cup butter, melted
12 oz shredded cheddar cheese
1/2 cup onion
1 (16oz) container of small curd cottage cheese
6-8 eggs (6 jumbo or 8 large)
1 tsp salt
1 tsp pepper

Directions:
Preheat oven to 375 º. Lightly grease 9x13 baking dish. Cook sausage in deep skillet over med/high heat until evenly brown. Add onion and cook for 1-2 min.

In the baking dish stir together shredded potatoes and butter and spread evenly in baking dish.

In a bowl beat eggs and add cottage cheese, cheddar cheese, salt and pepper. Mix sausage and onion into egg mix and pour over potatoes. Bake for 1 hour or until center of the casserole is cooked. Let cool for 5 min before serving.
