1 c sugar
3 c flour
1 tsp baking soda
1 tsp Cream of Tartar
2 eggs
3 tbsp milk
1 tsp vanilla
1 tsp orange rind zest
1 jar seedless raspberry or strawberry preserves
1/2 tsp salt

Directions:
Directions:
Mix like pie crust:butter, sugar, flour, baking soda, and cream of tartar. In another bowl beat together eggs, milk, vanilla, salt and orange rind zest . Add to dry ingredients. Mix well. Dough may be a little sticky. Flour hands and counter top to roll out and then cut out with biscuit cutter. Place rounds on cookie sheet one at a time and then put a 1/2 tsp. preserves in the middle of each round then put another round on top to cover and bake in a 375 degree oven 12 - 14 minutes....DO NOT let them brown. Put on cooling rack. When cool place in air tight container with wax paper between layers.
