3 c. dry pinto beans, rinsed
3 lb. pork roast, can use bone in roast, then make it 3 1/2 lb
water
1/2 c. chopped onion
2 cloves garlic, minced or use jarred garlic
1 T. salt
2 T. chili powder
1 T. cumin
1 tsp. oregano
1 can chopped green chilies
flour tortillas

Place rinsed beans in a crockpot and cover with at least 2 inches of water, to allow room for the beans to swell, let set overnight. In the morning, drain off the water and add enough water to the beans to just cover them, place the roast and the rest of the ingredients in the crockpot and cook on low 6-8 hrs, until roast is done and falls apart. Shred meat and stir until all mixed together. Place mixture in flour tortilla, add shredded cheddar or mexican cheese, roll up, place in a greased 9 x 13 glass pan , heat in microwave until hot, sprinkle cheese on top, or pour enchilada sauce on top and sprinkle with cheese. This is a very versatile recipe, you can put this on corn chips and add toppings, it freezes well. I usually make up the 'burritos' and wrap them in waxed paper and freeze, then you can just reheat as many as you need. If you are making this for a large group, 3 batches of this recipe fit in a roaster, cook at 250º for 6 1/2 hr.
