1 medium onion - chopped
1 boneless pork shoulder roast (3 1/2 lbs.)
1 medium size sweet red pepper - cut into squares
1 medium size green pepper - cut into squares
1 can (14 1/2 oz.) diced tomatoes with jalapeņos
2 teaspoons ground cumin
1 1/2 teaspoons garlic salt
1 1/2 teaspoons dried oregano
1 cayenne red pepper - seeded and chopped
1 jar (4 oz.) diced green chilies
1 can (11 oz.) sweet corn - drained
3 tablespoons tomato paste
16 corn tortillas

Garnish:
1/2 cup fresh cilantro - rinsed and dry
sour cream

Directions:

*In a slow cooker, layer the chopped onion, pork roast and sweet peppers
*In a medium bowl, stir together the tomatoes, cumin, garlic salt, oregano and cayenne pepper
*Pour evenly over the mixture in the slow cooker
*Add chilies and corn
*Cover slow cooker, cook on high for 5 hours
*Remove pork roast and keep warm
*Remove 1 1/2 cups liquid from pot and discard
*Stir tomato paste into slow cooker
*Cover and cook for 30 minutes
*Cut pork into slices and shred
*Add shredded pork to mixture in slow cooker - heat through
*Wrap pork mix into warmed corn tortillas - garnish with cilantro and sour cream
