4 chicken breast halves skinned and boned
salt and pepper
3 tbsp. butter
1/2 cup minced onion
1/2 lb. sliced mushrooms
1 tbsp. lemon juice
1 tsp. dried tarragon
1 cup heavy cream

Directions:
Directions:
Pound chicken breast lightly between layers of plastic wrap to obtain a uniform thickness. Melt butter on a large skillet. Sprinkle chicken breasts with salt and pepper and saute on both sides until cooked through and lightly browned. Set aside keeping warm. Add mushrooms and onion to the skillet and saute 2-3 minutes. Sprinkle with lemon juice and tarragon. Add cream and cook, stirring, until slightly thickened. Return chicken to skillet and heat through.
