1/4 cup flour
1 1/2 tsp salt
1 tsp sage
1/4 tsp pepper
2 1/2 to 3 lb frying chicken cut up
2 tbsp. cooking oil
2 tbsp. butter
1 cup sifted all purpose flour
1 tsp baking powder
1 tsp salt
3 eggs well beaten
1 1/2 cups milk
1/4 cup butter melted
1/4 cup chopped parsley

Directions:
Directions:
Combine first 4 ingredients in a flat dish. Roll chicken pieces in mixture to coat all sides. Heat oil and 2 tbsp. of butter in large heavy skillet and brown chicken pieces well. Put chicken pieces in greased baking dish about 13x91/2x2 inches as they brown. Heat oven to 350º sift 1 cup flour, baking powder and 1 tsp of salt into mixing bowl. Combine eggs, milk, 1/4 cup butter and parsley and add to dry ingredients. Blend until batter is smooth. Pour it over chicken pieces. Bake 1 hour or until chicken is tender and batter is dark golden brown.
