Grandmaman’s Morning Buns Recipe

1 cup sugar
2 cups boiling water
1 cup cold water
2 eggs
8 cups of flour
1 tbsp. or 1 packet of regular rise yeast
pinch of salt

lard to line the tins

*butter
*cinnamon
*brown sugar

*if making cinnamon buns

Directions:
Directions:
Start around noon the day before you need them.
1 cup sugar
Add to 2 cups boiling water
Set aside until sugar is dissolved. Stir occasionally if needed.

Sift 8 cups of flour into a large bowl. Bring the flour to the sides and make a well in the middle. Set aside.

Pour 1 cup cold water in sugar mixture.

Beat 2 eggs with a fork and
Add eggs to sugar mixture when it is luke warm.
Add 1 tablespoon or 1 packet of regular rise yeast in your luke warm mixture.
Add a pinch of salt
Let mixture sit for 2 or 3 minutes... the yeast will start to rise.
Slowly pour the liquid into the well and knead by hand, until all the liquid is blended.
Place dough in a warm part of the kitchen and cover with a light dishtowel.

Let rise until evening (9 or 9:30 pm).

Use lard to line the muffin tins. Roll 3 little balls to make one bun.
Let rise until 7:30 or 8 am the next morning.

For cinnamon buns: (the same recipe)
Cut your dough into 2 or 3 parts
With a rolling pin, roll out dough for cinnamon buns. Spread margarine on top, then add brown sugar, and sprinkle cinnamon to taste.
Roll and cut in pieces to put about 4 or 5 in a foil baking pan. Let rise overnight.

Bake in the morning at 300 ˚F for 15 - 20 minutes or until golden brown. Brush the top with butter while hot.
I usually make a double recipe. Double all the ingredients.
Extras may be frozen for a later date.

These always remind me of Christmas morning for breakfast, and the buns for a midnight turkey sandwich snack! Delightful treat & sweet memories!
