1 large can (goodness me) pumpkin
2 cups sugar
1 quart milk
3/4 tsp cinnamon
1/2 tsp nutmeg
1 heaping tbsp. flour
1 heaping tbsp. corn starch
1 tbsp. lemon extract
3 eggs (beaten)
1 tbsp. butter
1/2 tsp ginger
1/4 tsp allspice
1 tsp salt

Place milk and pumpkin in saucepan let come to a boil. Mix spices, sugar, cornstarch, flour and salt together. Add to the above and beat well with egg beater. Add some of the hot mixture to well beaten eggs and add back to hot mixture. Bring to boiling point, but do not let it boil after egg mixture is added. Add lemon extract and butter then beat well with egg beater. Let cool. Bake pie shells separately. Fill with the above filling and serve with whipped cream. This filling will make 3 pies.
