1/2 cup margarine
3 Tbsp. oil
1 cup sugar
1 egg
1 tsp. baking powder
1 tsp. vanilla
2 cups self-rising flour (sift before measuring)
CHOCOLATE FILLING:
2 cups white sugar
1 stick margarine
3 Tbsp. cocoa
1/2 cup milk
1 Tbsp. vanilla
Directions:
Directions:
Tea cakes: melt butter, add all other ingredients and mix with spoon (no mixer!)
Drop by heaping teaspoons on pan. Bake 350º for 8-10 minutes.
CHOCOLATE FILLING:
Mix all ingredients (except vanilla) in pan and cook on high until boils. Turn down on medium heat for 5 minutes (hard boil) until it boils up together. Take off stove and set pan in water and beat with a spoon until it looses it's shine; add 1 Tbsp. vanilla and mix in. Put on tea cakes as it thickens - will be hot.
