1 bag (14 oz) cubed herb stuffing
1 bag (7 oz) cornbread stuffing
1 lb. sweet Italian sausage, casing removed
3/4 stick (6 tbsp) butter
2 c chopped onions
2 Golden Delicious apples, peeled, cored and coarsely chopped
1 c chopped celery
8 oz. white mushrooms, sliced
salt and pepper to taste
2 tbsp minced fresh sage or 2 tsp dried
2 can (14 oz each) chicken broth

Directions:

Combine stuffing mixes in a large bowl. Brown sausage in a large skillet over medium-high heat for 10 minutes, stirring to break up chunks. Using a slotted spoon, transfer sausage to stuffing mixes. Pour off all but 2 tbsp drippings from skillet. Add 2 tbsp butter, onions, apples and celery to the skillet. Saute 8 minutes or until tender. Add to bowl with stuffing mixture.
Melt remaining butter in skillet. Add mushrooms, salt and pepper and cook 5 minutes until softened. Add to bowl with stuffing. Gradually add broth (reserving 1/2 c); toss until evenly moistened. Spoon into a greased baking dish. Drizzle with remaining 1/2 c. broth. Cover and bake 30 min. Uncover and bake 15 more minutes, until top is browned.

You can make this ahead and refrigerate until ready to bake. I usually make this on Thanksgiving. I use dried sage. Mike and Granny always tasted the stuffing when I was making it, to determine if there was enough sage.
