2 Tbsp vegetable oil
1 large onion thinly sliced
12 cups finely shredded red cabbage (about 3 pounds)
1 large apple, peeled, cored, chopped
Salt and pepper
1/4 cup red wine vinegar
3/4 cup water
3 slices bacon
2 Tbsp flour
2 Tbsp brown sugar

Directions:
Directions:
Heat oil in large saucepan over medium heat. Add onion and saute about 5 minutes or until softened.

Add cabbage, apple, vinegar and water to pan. Stir to combine. Cook, stirring frequently, until cabbage begins to soften. Add more water, if necessary, to prevent sticking.

Combine flour and brown sugar, set aside. Slice bacon into 1/2 inch pieces and fry until crisp. Remove cooked bacon from pan and quickly stir in flour/sugar mixture to form a paste. Add additional vinegar to form a thin paste. Add to cooked cabbage mixture, season with salt and pepper.
