1 pechuga de pollo, 1 cebolla blanca, 1 zanahoria y 1 tallo de apio.
4-5 limones
1 naranja agria
2 cebolla colorada
4-5 tomates cortados en cuadrados
1/4 de taza de aceite (aunque cambia un poco el sabor yo use de oliva)
Sal, culantro al gusto

Poner en una olla el pollo, cubrir de agua y dejar hervir, espumar cuanto sea necesario hasta que el caldo este claro. Agregar una cebolla, el tallo de apio y una zanahoria cortada en cuartos, dejar cocinar hasta que el pollo este suave. sacar el pollo y después de enfriarse desmenuzar. Regresar los huesos al caldo y cocinar por unos 30 minutos más. Colar el caldo.

Encurtir las cebollas con el jugo de limón, el aceite y sal, añadir los cubos de tomate, el jugo de naranja y el culantro, mezclar bien, por ultimo mezclar el pollo y unas dos tazas de caldo. Corregir el agrio del limón si es necesario.
Refrigerar hasta el momento de servir.
