1 1/3 cup flour
1/2 tsp. cream of tartar
1/2 tsp. baking soda
1/8 tsp. salt
1/2 c. (softened) butter
1/2 cup + 2 T. sugar
2 T. packed brown sugar
1 egg
1 tsp. vanilla
FOR ROLLING:
1/4 cup sugar
4 tsp. cinnamon

Preheat oven to 350º. Grease baking sheets. In large bowl, sift together flour, cream of tartar, baking soda and salt. In separate bowl, on medium speed, beat butter with both sugars until light and fluffy, (2 min.) Beat in egg and vanilla. On low speed, beat in flour mixture in two batches, making sure first half is incorporated before adding remaining flour: stop beating when second batch is fully combined. Roll dough into 1" balls.
FOR ROLLING, mix sugar and cinnamon in bowl. Roll balls of dough in cinnamon sugar. Place 2" apart on baking sheet. Using palm of hand, flatten each dough ball slightly.
Bake 9-10 min. for chewy cookies, or 12-13 min. for crispy cookies. Cool in pan on racks; cool completely.
