12 tasas de agua fria
4 libras de pollo en cuartos
1 taza de cebolla paitena en cubitos
1/2 taza de zanahoria en cubos
1/2 taza de Apio (Celery)
1 cucharada de ajo picado
1/2 cucharadita de comino
1/2 cucharadita de pimienta
1 cucharada de sal
4 papas grandes cocinadas y cortadas en la mitad
1 taza cebolla verde picada
1 taza culantro picado

haga un fondo con el pollo, los vegetales, y sasone con ajo, pimienta,sal, y comino.
deje cocinar por lo menos 2 horas a fuego mediano
separe el pollo- retire la piel y los huesos
cierna el caldo
para servir poner una mitad de papa en el plato, el pollo y el caldo
sirva caliente y poner al gusto la mescla de cebolla verde y culantro (garnish)
