4 medium red potatoes, cooked, peeled and sliced 1/4 " thick
8 slices, thick-sliced bacon cut into 1" pieces
1 cup sliced celery
2 medium onions cut into 1/8's
1/4 c. sugar
3/4 c. cider vinegar
1/2 tsp. salt and 1/4 tsp. pepper
1/4 c. sliced parsley

Prepare potatoes. In 3-qt. saucepan, cook bacon, stirring constantly, over high heat 3 minutes. Stir in celery and onions. Reduce heat to medium: continue cooking, stirring occasionally, until vegetables are crisply tender (5-8 minutes). Stir in remaining ingredients except potatoes and parsley. Continue cooking, stirring occasionally, until mixture comes to a full boil ( 3-5 minutes). Stir in potatoes; continue cooking until potatoes are heated through (5-10 minutes). Sprinkle with parsley.

Americans generally forget about the German style of potato salad, as we don't consider the fact that a potato salad can be hot. It is a different take on an American standard and equally as good.
