Roast Chicken with Potatoes:

3# free-range or corn-fed chicken
2# potatoes, peeled and sliced
Juice of a large lemon
4 T. olive oil
2 1/2 sticks butter
Salt and freshly ground pepper
1 T. oregano
1/2 c. hot water

Directions:
Directions:
Preheat Oven: 425º

Place the chicken in a large roasting pan, breast down and surround it with the potatoes.
Pour on the olive oil and lemon juice, dot with butter, season, and sprinkle with herbs.
Pour the water in a corner of the pan.

Bake: 30 Minutes.

Take out, turn the chicken over, and baste.
Sprinkle on remaining herbs and cook for another hour, checking in case it needs a little more water.
The chicken should be quite golden by the end.
Serve with a crisp green salad.
