2 lbs. ground beef
3/4 cups soft, fresh bread crumbs
1/2 cup onion - minced
2 eggs - beaten
1 1/2 teaspoon salt
1 1/2 teaspoon pepper
1 cup mushrooms - chopped
3 cups Swiss cheese - shredded

*Preheat oven to 350º
*In a large bowl, combine the beef, bread crumbs, onion, eggs, salt, pepper and mushrooms and mix well
*Pat out mixture into a 14x18" rectangle on a piece of wax paper
*Spread cheese out on meat mix leaving a 3/4" border around the edges
*Roll up jelly roll style to enclose the filling and form a loaf
*Press loaf in on both sides to enclose the cheese
*Place in a 10 x 15 baking dish
*Bake for 1 hour
