1 c. canned unsweetened pumpkin
1 c. sugar
1/2 c. canola oil
2 eggs
1 3/4 c. flour
1 tsp baking soda
1/2 tsp salt
1/2 tsp ground cinnamon
1/2 tsp ground cloves
1/2 tsp ground nutmeg
1/4 tsp baking powder
1 c. dried cranberries or chocolate chips (optional)

Directions:

Heat oven to 350º. Grease 8x4" loaf pan.

Beat together the pumpkin, sugar, oil and eggs in a large bowl. Sift the flour, baking soda, cinnamon, cloves, nutmeg, salt and baking powder into the bowl. Stir to combine all the ingredients. Fold in the cranberries or chocolate chips. Pour mixture into pan.

Bake for 60 minutes or until the top is lightly browned and a skewer inserted into the center comes out clean. Cool on a wire rack.

We love Fall, and love to bake. This one is a hit with Thomas, especially since he gets to help! I always give him a mixing bowl of his own, and a few measuring spoons. I let him scoop out some of the dry ingredients to mix in his bowl. And, of course, we snack on the cranberries and chocolate chips while we mix!
