1/2 cup pine nuts
1/4 cup raisins
1 tbsp. butter
1 tbsp. olive oil
1 large shallot
1 clove garlic, chopped
1 1/2 cups Israeli couscous
2 cups chicken stock
1 bay leaf
cinnamon
salt
mint
cilantro

Directions:
Directions:
Toast pine nuts. Add raisins to a small bowl and cover with hot water. Warm butter and oil, add shallot and garlic and saute for 3 minutes.
Add couscous. Pour in chicken stock, bay leaf and cinnamon and salt.
Bring to a boil. Cover and simmer for 8-10 minutes. Toss in nuts, drained raisins, mint and cilantro.
