1/2 cup sesame seeds, toasted
4 eggs, lightly beaten
2 10oz pkgs spinach, thawed and squeezed dry
3/4 cup unsalted butter, room temperature
1/2 tsp white pepper
2 cups garlic seasoned croutons
1/4 tsp nutmeg
1 cup freshly grated Parmesan cheese

Directions:

Heat heavy, medium skillet over medium heat; add sesame seeds. Cook, stirring constantly, until seeds are golden (2-3 minutes). Grind croutons into fine crumbs in food processor or blender. Mix spinach, crumbs, cheese, eggs, butter, pepper, and nutmeg thoroughly in medium bowl.
Shape mixture into small balls, about 1 rounded teaspoon each. Roll around in sesame seeds I a pan to coat lightly.
Bake at 350 degrees on ungreased baking sheet about 8 minutes until firm.
OR: Freeze in a single layer on waxed paper or Saran wrap lined pans. transfer to air tight containers.
Freeze 4-6 weeks. Bake as above 10-15 minutes.
