French Onion Soup Gratinee Recipe

3 lbs. sweet onions (Vidalia or Spanish) sliced thin vertically
3/4 cup butter
1 T. flour
6 C. beef broth*
1/3 C. dry red wine
1/2 tsp. dried thyme (crushed)
S & P to taste
French bread, sliced and lightly toasted
Gruyere cheese, grated**
Parmesan cheese, grated**

In a large heavy saucepan, slow cook the sliced onions in butter over low to moderate heat, stirring occasionally, for about 45 minutes or longer until caramelized and golden color. (The longer you cook them, without burning them!!, will make them sooo sweet)
Sprinkle flour over the onions and cook the mixture, stirring, for 2 minutes.
Stir in the broth, wine, thyme, s & p.
Cover kettle and cook for about 30 minutes.

To serve, put in ovenproof ware soup bowls or cups. Top with a slice of bread. Add cheese and put under broiler til cheese is melted and bubbly.

*Any beef broth may be used. I prefer LeGout Beef Base. I have used this brand in the restaurants for years. Not as salty as a lot of other bases. Can purchase online thru Amazon. Order a few...put in the freezer..last for years.

**Any cheese may be used. I have used swiss, provolone, mozzarella

This is a "Delish" onion soup recipe. See my note on the beef broth cause I think that makes the difference. Have gotten rave reviews from all who have tried (it was on the menu at Doc's and Mom and Dad would order it quite regularly....Mom always ordered it without the bread and xtra cheese. (It is very hard to float the cheese without the bread.....but we did it and she loved it!)
