1 lb dried red beans
1 lb meaty ham bone or smokek ham hock
1 large onion - chopped
2 cloves garlic chopped
1 bay leaf
1/2 tsp red pepper
1 lb smoked sausage - bite size pieces
Rice

Directions:
Directions:
Rinse beans, pick clean. Cover with water and soak. Drain and discard water.
Place soaked beans, 6 cups water, ham, onion, garlic, bay leaf and red pepper.

Cover and simmer 2 1/2 hours until beans are tender
Remove any ham bones, then add sausage.
Boil gently uncovered 15-20 minutes til gravy forms.

To serve, place rice in bowl, sprinkle with Gumbo File, cofer with rice.
Can sprinkle with chopped onion.
