1 or 2 fresh (never frozen) roasting chicken
Celery
Onion
Carrot
Spices:
dozen peppercorns, one star anise, a bay leaf, a bit of dry thyme, marjoram etc

Directions:
In a large soup pot: chop a bit of celery, onion, and carrot. Add spices. Cover with water and boil a couple of minutes. Add about 3/4 coup salt and dissolve into broth. Let stand to cool completely.

Add Chickens to cool broth, cover with ICE WATER, and refrigerate for 2-3 hours. An Hour before cooking, remove the chickens from broth, rinse briefly, and place breast down in large roasting pan and allow to come to room temperature.

Preheat oven to 450º Melt a stick of butter and pour over chickens.
Place chickens in oven and roast for 15 minutes, basting and rotating pan in oven once or twice. After 15 minutes, reduce heat to 400º and roast until a knife inserted into the leg joint runs with clear juices, about 30 more minutes. Let chickens stand at room temperature 5 minutes or more before serving. Do not reheat.
